Maria Nancy Cuellar was born and raised around coffee – it’s always been part of her life.

She was raised with her parents producing coffee and she plans to raise her children the same way, by producing coffee. Maria Nancy and her husband decided to start investing in and producing specialty coffee for the wellbeing of their children.

For this couple, their children are the most important thing in their decisions. They named their farm Villa Sofía to honour their youngest child, and their only daughter. The extra income from producing specialty coffee helps Maria Nancy offer her children a good quality of life.

Maria Nancy and her husband Edwin work together on their farm, they divide the work and the farm activities, and both aim towards producing better coffee together.

“The production of specialty coffee can have drastic changes in one’s lives. But these are positive changes. Yes, we need more time, it’s more work, more attention to detail in every single part of the process, but the work definitely pays off.” says Maria Nancy.

She is deeply proud everything on her farm, but mainly, she is proud that although is small, it has produced great coffee and it has allowed them to maintain their family in good economic terms.

The farm has a very pleasant location: it’s high, with a beautiful landscape, and it has a great weather. They plan to improve their post-harvest infrastructure soon for them to continue improving the quality of their crop.

Caturra is a natural mutation of Bourbon that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered.

How is your coffee ethically sourced?

We source our coffee from small producers through responsible importing companies. 95% of our green coffee beans are supplied by Caravela Coffee, Cafe Imports, and Melbourne Coffee Merchants (certified B Corporations) plus Condesa Co Lab and more.

We transparently share all the information about each coffee lot (territory of origin, producer, variety, processing method, importer, quality grade) on each coffee page. This includes blend components for our espresso blends.

We take quality sourcing very seriously, so being fully transparent about our coffee is a way to honour everyone’s efforts along the production and gain the trust of ethical-minded consumers.

Do you roast dark or light?

We roast our single origins using omni medium/light profiles. (This means you can use it for pour over and espresso brewing, no need to buy different bean bags with specific roast styles.)

We roast our espresso blends using darker profiles.

What is “specialty coffee”?

The definitions and references to specialty coffee are changing.

Historically, and as most people think of it these days, specialty coffee is Arabica beans that score over 80 in the old Specialty Coffee Association point scale. Today, the SCA refers to specialty coffee as “a coffee or coffee experience that is recognized for its distinctive attributes, resulting in a higher value within the marketplace.”
