Nathan’s Espresso

First day of ideal brew window, first cup. Ran a little short but could tell it was going to be good. Second shot did it slightly finer, and at 21g, pulled a 26s shot and it was beautiful.

24g coffee ground @ '18' setting on Baratza Encore - medium coarse I guess? used smaller (155) Kalita Wave dripper & Brewista kettle @ 94 degrees. as timer started, began to slowly add water up to 40-50g for bloom, then a gentle stir. after 0:30, began adding more water. by around 2:50, reached target of 390g. water level remained relatively high (near top of filter) throughout the brewing process. done by around 3:00. found it to be absolutely delicious, probably my favourite filter cup so far with the Brew Crew sub... now to try it as espresso!

Colombia Alirio Muñoz

Jared’s V60

Extremely fruity aromas. Slightly weak taste on this brew, hard to pick up that apple note. Definitely going to up the grind setting on next time to improve the extraction. Looking forward to perfecting this one!

Kenya Ichamara

Definitely pickup that creamy mouth feel with a tad of orange. Wonderful acidity with a finish of slight caramel for me. A great taste that lingers long after the coffee is gone. Really enjoying this one.

Ethiopia Wote

Thomas’s V60

Best roast of the Wote I've tasted to date. This coffee had a super delicate mandarin aroma which blew me away as soon as water touched it. The citrus was vibrant and the sugars were smooth. Lemon curd, orange blossom and just hint of dark chocolate on the finish made this 250g of pleasure.

Kenya Mugaya Aa

This Kenyan had both the body and acidity of a ripe, fleshy stone fruit. The finish lingered with notes of Rhubarb and light, malty caramels. The V60 gave some great clarity to all the fruitiness and the body held well (the Kalita would've probably been a little too heavy). I just happened to have another Kenyan on my counter when the delivery arrived and decided to cup them next to each other. On the cupping table the Mugaya started smooth and creamy but developed an intriguing juiciness I really want to explore. I have a feeling this coffee would be a stand out espresso.

Colombia Marco Fidel Rodriguez

Thomas’s Kalita Wave

The Kalita brought out that smooth Colombian body but this coffee had some great, juicy acidity. My immediate thought was tropical fruits. It was a much brighter acidity than the usual red apple i'm used to tasting in Central/South American coffees and I made sure everyone at work had a sip. Also let's not forget that butterscotch finish; Werther's Originals for days. I also tried a few CCDs but it rolled off that signature brightness and became a little one dimensional.

Big body when hot, jammy as it cooled. The first few sips screamed cocoa. As it began to cool the cocoa sweetened to dark chocolate and the acidity brought out jammy notes like cherries. It was basically a Cherry Ripe.

Full bodied. Crispy bright acidity. As balanced as it gets. Tried the V60, loved it but thought the Kalita would compliment the size of the body. It so did. I used a sieve to remove the boulders and it really cleaned up the acidity (highly recommended move). I went a step further and used a chocolate shaker to take out the fines but the improvement wasn't as drastic as the removal of the bigger particals. Bloomed for 30 seconds. Finished pouring at 1:05.

A very light fruity coffee. Was great. I was using a cafflano for the first time and i think the extraction time was slowed a little by the fines in the grind so had a slightly bitter after taste. Going to attempt a courser grind next time.

Wow - what a half day or brewing technique change makes (or was it my palate / time of day?) Getting citrus and jasmine when the coffee is hot. (Brewed at 88ºC, tasted at 7:30am, unlike my Kalita Wave which was in the afternoon the day prior) - when cooling down the flavour intensifies.

Not a lot of flavour hot off the brew (might try the next brew at a higher temp - I brew at 88ºC mostly) - if I didn't know any better I'd say I was drinking tea ;) As per usual, when the coffee gets closer to room temperature is usually when my palate picks up what it likes. This time it was a richer (but yet still?) tea-like flavour. (Maybe I should start drinking tea?)

Kenya Kiangoi Aa

Jason’s Kalita Wave

Not as good as it was tasting on the Hong Kong and Phuket trip (maybe travelling around the world makes it taste different) - but still good in the cup. The berry sweetness seems to have disappeared, but the acidity is still present enough to make it a crisp finish. Brew temp: 88ºC
