First day of ideal brew window, first cup. Ran a little short but could tell it was going to be good. Second shot did it slightly finer, and at 21g, pulled a 26s shot and it was beautiful.
I love these beans! It tastes kind of like pear to me and I definitely get an almond after-taste. Really delicious!

Holy moly this is a wild coffee. Definitely NOT an every day coffee. Banana cake, loads of tropical fruit. Could use more age to settle down. keen to try at 4 weeks of age.

Still a bit fresh and brewed slightly longer than ideal. Lots of perfumed florals, creamy body, sweet, elderflower, blueberries. Very complex and will only get better as it ages!

Very sweet and juicy with great clarity on the finish. Turkish delight and blackberry with plum. Very little "process" flavour in the cup
One of my highlights of 2021. Tea like, and tasted like berries and stone fruit.
