How to brew V60 like John K

John Kaye generally brews his Hario V60 with the Drip Assist, a relatively recent add-on that makes it super easy to achieve a consistent brew—plus, you don’t need a goose-neck kettle.

The Drip Assist has been designed to simplify the pour-over brewing style, achieving an even coffee bed distribution and controlled water flow with minimum effort. It’s almost like an auto-pilot.

ℹ︎: If you don’t have a grinder, that’s OK! You can always use pre-ground coffee, though we recommend freshly ground because it does elevate the flavour of each brew.

♨︎: In our recipes, we measure water in grams because we use scales, and it’s easy to achieve precision this way. However, if you don’t have scales, the conversion is easy: 1g=1mL.

Method

1. Grind 24g of coffee.

   I do it on the finer side of the filter scale. In the Breville Smart Grinder, that’s setting #46.

2. Set a paper filter in the V60, then on top of the server. Rinse and discard this water.

   The wet paper makes the cone surface more grippy for the coffee grounds, plus this warms up the vessel when you do it with just-boiled water.

3. Bring the server and V60 onto the scales. Add 24g of ground coffee.

   Give the brewer a gentle shake to create a flat bed.

4. Place the Drip Assist on top of the V60 and tare scales to 0.

   Taring everything, including the Drip Assist, will reflect the total grams of water poured at the end.

5. Create the bloom by adding 72g of just-boiled water and agitating gently.

   I like to do my blooms with water equal to 3 times the weight of coffee. So, for 24g of coffee, I bloom with 72g of just-boiled water.

6. Place the Drip Assist on top of the brewer again and wait for 30 seconds.

7. Add 100g of just-boiled water and wait for ~30 seconds. Repeat once again.

   Pour the water using the external ring of the Drip Assist (the central one is designed for the bloom, but I don’t use it)./p>

8. Pour a last batch of water until reaching the 400g mark on the scales.

   Once you’ve done this, you can take the Drip Assist off and gently agitate to facilitate a flat bed once again.
   
   The total brew time should be between 2.5 and 3 minutes.

9. Pour the goodness onto a cup(s) and enjoy!
